Switch away from using MinIO in Docker Compose Setup

Hello,
the current Docker Compose Setup uses MinIO as artifact storage. Since MinIO is not actively maintained anymore the example setup should be changed. I have seen similar projects switching to RustFS. Maybe this could also be a solution here?
