Backport latest docker-starter improvements

Backports the recent changes of jolicode/docker-starter.

• Git worktree isolation (docker-starter#421): inside a worktree, the compose project name is suffixed with -wt-<name> and ports are shifted. castor about shows the right URLs, and castor docker:ports displays them.
• One-shot psql queries (docker-starter#428): castor pg -- "SELECT now();" or castor pg -- -c "\dt", with the psql exit code propagated. Adds docker_compose_exec() and renames .castor/database.php to .castor/postgres.php.
• Simpler docker:push (docker-starter#429): delegates to buildx bake's native compose support instead of generating an HCL file. The qotd-specific --tag option is kept (--set <service>.tags=… + --push). The --dry-run output is equivalent to the previous one in dev and prod, with and without --tag.
• Builder image: remove the sudo package, which cannot work with a UID that has no /etc/passwd entry (docker-starter#433), and show builder in PS1 instead of "I have no name!" (docker-starter#432).
• Autocomplete the --service option of build / up / stop, simplify workers_stop.

Note: docker-starter uses docker\get_service_names as the autocomplete callback, but Symfony passes a CompletionInput to it, which would be taken as the profile name. A dedicated complete_service_names(CompletionInput $input) is used here instead.
