Subject: [PATCH] chore: build with Go 1.27.3

Move from Go 1.26.10 to the latest hosted toolchain. Both include the
eMudhra CA denylist (CVE-2026-111943); CI and release workflows read the
version from go.mod, so no workflow changes are needed.
